In order to create SOFI’s distinctive and refreshing finish, founder Tommy Maclean, and 5th generation winemaker Simon Gilbert, joined forces to carefully blend grapes from across the country’s premium wine regions.
The team worked with the late Bill Torrey, who brought decades of experience pioneering botanical distillation. Most recently, the team have been harnessing local extracts of Native Lemon, Tasmanian Pepperberry, Finger Lime and Davidson Plum.
